Mixed by hand every day and left to ferment for two days before anybody stretches it. That slow ferment is where the flavor lives.

775° Brick Oven
Neapolitan-style, cooked fast and hot. The crust sets and chars before the toppings have a chance to dry out.

Stretched by Hand
No press. No rolling pin. Every pie gets stretched by hand, which is why no two of them come out looking quite the same.

No Freezer On Site
We don't own one, so nothing is held in frozen storage. Dough is never frozen, toppings come in fresh, and what does arrive frozen thaws in the cooler and gets used.
